Vegan pancakes | Veg Lyf
As we head closer to the big day and as many people, myself included, try to make more plant based choices, I decided to take one for the team and try out two different pancake recipes and let you know what I thought.
The first one I tried was from Bosh, these are banana based and are more scotch/American pancake than I am used to celebrating with but were nonetheless delicious
I made them for breakfast for me and mum to try out and we topped them with fruit and maple syrup
The second recipe is from The Buddhist Chef. I fully messed up the first two, making them far too thick so they wouldn’t cook through, so if you are going to try this recipe then be mindful of the amount of batter you use.
I topped these with the classic comb of sugar and lemon and it was exactly what I was hoping it would be and what I think of when I think of pancakes. This recipe makes A LOT of batter though so if you are going to give it a try make sure you are prepared to eat pancakes for days (what I will be doing) or have help there to get you through them all
UPDATE: second day batter is so much better and if you tip the pan to spread the batter as you pour it, you will get bigger, thinner pancakes
